The Brain Nutrient in Egg Yolks
Have you had your eggs yet? I eat mine closer to noon these days, but... I always eat them. And you should, too.
If you love your eggs, today I will offer another reason to love them.
And if you don't yet love eggs, consider this yet another reason to convert.

Today, I am promoting eggs, no yolking! Actually, lots of yolking. That's the point.
🥚 Why I Started Eating Eggs
For most of my life, I avoided eggs.
Not completely. I baked cakes and brownies with them!
But sitting down to a couple of over-easies? Never. Sunny sides? The horror!
And my egg rejection was supported by experts who taught that eggs were dangerous fo our health.
Well, I am no longer blindly trusting experts.
And I am eating eggs.
On my journey to a nutrition-first diet for brain health, I realized eggs are pretty much nonnegotiable for those who value nutrition.
And those yolks? That's where many of the nutrients live.
These days, I aim to eat at least three whole eggs every day.
And this week I came across another reason why eggs deserve a regular place our plates.
🥚 A Small Nutrient with a Big Job
I came across an article recently discussing research published in the journal Aging and Disease, and one nutrient kept showing up in the findings: choline.
Researchers looking at metabolic health noticed that people with obesity tended to have lower levels of choline in their blood, along with markers linked to inflammation and stress on brain cells.
As neurologist Dr. Richard Ford explained:
➡️ “The study suggests that metabolic stress earlier in life could affect brain health later in life.”
Another striking point: about 90% of Americans do not meet the recommended daily intake of choline.
Choline plays a role in several important systems in the body, including brain function, liver health, and heart health.

The good news is that one very familiar food happens to be one of the richest natural sources of choline.
Eggs.
🥚 Eggs Make it Easy
Here’s the part I love.
One whole egg contains roughly 150 milligrams of choline, and almost all of it is in the yolk.
Current recommendations suggest about 425 milligrams per day for women and 550 milligrams for men.
I proclaim that there is no better breakfast than 3-4 eggs plus breakfast meat.
Let's do the math for the low end.
Three eggs deliver about 450 milligrams of choline.
In other words, a three-egg breakfast covers the daily recommendation for women, and four eggs covers the RDA for men.
Nice.
But this only works when you eat the whole egg.
I repeat: the yolk is where the choline lives.
Throwing away the yolks never made any sense.
🥚 Choline: Just One More Reason to Eat Your Eggs
Nutrition advice has a way of becoming complicated.
New superfoods appear. Supplements promise shortcuts. Charts and rules pile up until eating well feels like a full-time project.
But sometimes the answer is sitting right there in the refrigerator.
Eggs have been nourishing people for generations for a reason. They deliver protein, natural fat, and an impressive collection of nutrients in a simple, affordable food.
Now we can add choline for brain health to the list.
So if eggs are already part of your breakfast routine, keep going.
And if you’ve been skipping them because of the old fear of yolks, this may be the moment to reconsider.
Your brain will happily take the yolk. 😉
